- 1 (35 ounce) 0% Greek yogurt
- 1 bunch mint leaves, chopped
- 4 cups water (as needed)

- Juice of 2 lemons
- 16 fresh mint leaves, plus 4 sprigs for garnish
Directions:
1. Refrigerate papaya until very cold, at least 1 hour or overnight.
2. Blend papaya, ice, yogurt, ginger, honey and lemon juice in a blender. Add up to 1/4 cup water, 1 tablespoon at a time, until mixture is smooth and thinned to desired consistency. Blend in mint leaves. Garnish with mint sprigs.
Pineapple Ginger Passion Smoothie
This multi-purpose, antioxidant-rich smoothie offers a diverse range of flavors and health benefits. Pineapples are combined with ginger, mint and basil for a delicious taste and to promote improved respiratory health and digestion. The smoothie also helps to boost the immune system, strengthen bones and reduce inflammation.
Ingredients:
- 4 cup fresh pineapple chunks
- 1 cup pineapple Juice chilled
- 11/2 ounces finely chopped ginger
- ¼ ounce fresh basil
- ¼ cup fresh mint
Directions:
1. Place the first three ingredients in a blender and blend until smooth.
2. Then, add in the ice cubes and blend on high speed until completely smooth. Or, as I like it, leave the ice somewhat chunky.
Gazpacho Smoothie
The combination of tomatoes, cucumber and peppers makes for a strong dose of Vitamin C and antioxidants – all of which are vital for a strong immune system.
Studies have shown both cucumbers and tomatoes to have cancer-fighting properties, while orange bell peppers contain high amounts of fiber to assist in weight loss and appetite suppression.
Ingredients:
- 2 pounds ripe tomatoes, roughly chopped
- 1 English cucumber, peeled and roughly chopped
- 1 clove garlic, peeled and roughly chopped
- 1 orange bell pepper, seeded and roughly chopped
- 1 medium shallot, peeled and roughly chopped
- Kosher salt and freshly ground black pepper
- 1/3 cup good extra-virgin olive oil, plus more for garnishing
- 2 tablespoons sherry vinegar
Directions:
1. Add the tomatoes, cucumber, garlic, bell pepper and shallot to a large bowl and toss together with a big pinch of salt and pepper.
2. Add to a blender and blend until smooth (you may have to do this in batches).
3. Then drizzle in the olive oil and vinegar with the blender running.
4. Place back in the bowl, cover and refrigerate for at least 1 hour for the flavors to develop and for the soup to chill.
